Simple Stout Stew
There are many great beef stew recipes out there, but this one is very simple and extremely savory and might possibly the best pairing with a stout beer in existence.What you need:
1 large piece of beef, evenly sliced, at least 1.5 inches thick
2 lbs of new red potatoes, cleaned
1 pound of sweet vidalia onions
1 pound of other vegetables (carrots, cauliflower)
1 bunch of fresh chives, chopped
kosher salt and fresh ground black pepper
4 of your favorite stout beers
Worcestershire sauce
Olive oil
Step 1: pick your ingredients
We recommend getting farm raised beef, but your local store will do. The key is not too lean, not too fatty, and very evenly sliced. The thicker it is, the longer it will take to cook. Veggies from the farmer's market and herbs from your garden, of course!
Step 2: prep and sear the meat
Rub the meat with salt, pepper, and Worcestershire. Add some olive oil to a large pot on the stove and crank up the heat to high. Sear the meat on both sides for 3-4 minutes each. Add one of your beers and turn down the heat to low and set the timer for 30 minutes.
Step 3: prep the veggies
Cut the vegetables into evenly sliced pieces. Chop up the chives.
Step 4: cook!
After the 30 minutes are up, you want to flip the meat over and possibly add some more beer so it is just barely covered. Set the timer or 45 minutes. Flip. 45 minutes. Flip. 45 minutes. As soon as the meat starts to soften, you want to add a little more beer and about 4 cups of water. Add your vegetables, a little more Worcestershire, and salt and pepper to taste. Another 30-45 minutes of slow boil and your stew is done!
Garnish with fresh chives and enjoy with a couple stout beers! :)
