Mango Shrimp Burritos
1 can black beans2 tsp chili powder
1 tsp cumin
kosher salt, fresh ground black pepper
1 green chile pepper, sliced. 2 if your like spice. habanero if you like pain.
1 lb shrimp, uncooked and peeled
1 mango, sliced
Shredded cheese
salsa*
Soft tortillas
Preheat oven to 375. Combine can of beans, chili powder, cumin and salt to taste in medium bowl, and set aside. Saute the shrimp and set aside.
Spread bean mixture on tortillas and add mango slices and shrimp.
Wrap 'em up, and bake for approximately 8 minutes.
* Use your favorite salsa here, but a simple pico-de-gallo is best. Fresh tomatoes, onion, cilantro, salt and pepper.
